  • 14 oz extra firm tofu
  • 2 tbsp cornstarch
  • ½ cup soy sauce (or coconut aminos)
  • 3 tbsp maple syrup
  • 2 tbsp sesame oil
  • 2 tbsp rice vinegar
  • 3 cloves garlic (minced)
  • 1 tbsp ginger (grated)
  • 3 cups cooked rice
  • 2 cups steamed edamame
  • 1 avocado

Instructions

  1. Press the tofu to remove excess moisture, then cut it into cubes and coat with cornstarch.
  2. Heat olive oil in a non-stick frying pan over medium heat and cook the tofu until golden brown and crispy.
  3. In a mixing bowl, combine soy sauce, maple syrup, sesame oil, rice vinegar, garlic, and ginger. Mix until smooth.
  4. Pour the sauce over the cooked tofu in the pan and allow it to thicken.
  5. To serve, layer cooked rice in bowls and top with crispy tofu, edamame, sliced avocado, and desired garnishes.
