  • 6 bell peppers (2 green, 2 yellow, 2 red)
  • 1 lb lean ground beef
  • 1 cup chopped yellow onion
  • 1 cup white jasmine rice
  • 2 cups beef broth (or chicken broth)
  • 21 oz salsa (mild, medium, or hot)
  • 1 tsp taco seasoning
  • 1 tsp cumin
  • 1 cup shredded Mexican blend cheese (divided in half)

Instructions

  1. Preheat oven to 375°F.
  2. Slice tops off bell peppers and scoop out insides; rinse and pat dry.
  3. Place peppers upright in a baking dish; season with salt and pepper, drizzle with olive oil, cover with aluminum foil, and bake for 25 minutes.
  4. In a skillet over medium-high heat, sauté onions in oil until translucent; add ground beef and cook until browned.
  5. Stir in salsa, taco seasoning, cumin, rice, and broth; cover and simmer on low heat for 15 minutes.
  6. Mix half of the cheese into the filling; stuff mixture into baked peppers and top with remaining cheese.
  7. Bake uncovered for an additional 15-18 minutes until peppers are softened.
