  • 2 cups chopped bell peppers

  • 1 cup tomato salsa
  • 1 cup long-grain white rice (rinsed)
  • 1 cup shredded mozzarella cheese

Instructions

  2. Stir in minced garlic, salt, oregano, pepper, and cumin; cook for an additional minute.
  3. Pour in the chicken broth and scrape up any browned bits from the pan. Mix in tomato salsa.
  4. Add rinsed rice and stir to combine. Bring to a simmer, cover, and reduce heat to medium-low. Cook for 15-20 minutes until rice is tender.
  5. Sprinkle mozzarella over the top, cover again until cheese melts before serving.
