  • 1 bunch asparagus, trimmed and cut into 2-inch pieces
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • ½ teaspoon red pepper flakes (optional)
  • ⅓ cup sweet chili sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon cornstarch mixed with 2 teaspoons water
  • 1 tablespoon sesame seeds for garnish
  • 2 tablespoons green onions, sliced for garnish

Instructions

  1. Pat the shrimp dry and season with salt and pepper. Prepare asparagus by trimming and cutting into pieces. Mince garlic and grate ginger.
  2. In a small bowl, whisk together sweet chili sauce, soy sauce, honey, rice vinegar, and cornstarch slurry.
  3. Heat olive oil in a large pan over medium-high heat. Stir-fry asparagus for 2–3 minutes until slightly tender; remove from the pan.
  4. In the same pan, add shrimp along with garlic and ginger; cook for about 2 minutes per side until shrimp are pink.
  5. Lower heat to medium-low; add the sauce mixture to the pan and stir until thickened (about 1–2 minutes).
  6. Return asparagus to the pan; toss everything together for another minute.
  7. Serve hot, garnished with sesame seeds and green onions.
