  • 6 bell peppers
  • 1 onion, diced
  • 1 lb lean ground beef
  • 14.5 oz can diced tomatoes
  • 18 oz can black beans, drained & rinsed
  • 15 oz can corn, drained & rinsed
  • 2 cups cooked brown rice
  • 1 1/2 cup shredded cheddar jack cheese
  • 1 taco seasoning packet
  • 2 tsp garlic powder
  • 1 tsp chili powder
  • Salt
  • Black pepper

Instructions

  1. Preheat your oven to 350°F.
  2. Cut bell peppers in half lengthwise and remove seeds.
  3. Bake the halved peppers in a baking dish for about 5 minutes.
  4. In a pan over medium heat, sauté diced onion with garlic powder, chili powder, salt, and black pepper until fragrant.
  5. Add ground beef and cook until browned.
  6. Stir in diced tomatoes, black beans, corn, cooked brown rice, and taco seasoning; mix well.
  7. Stuff each pepper half with the meat mixture.
  8. Cover and bake for about 10 minutes; then uncover and sprinkle cheese on top.
  9. Bake uncovered for an additional 15 minutes until bubbly.
