  • 1/4 cup peanut butter
  • 2 chicken breasts, cooked and chopped
  • 3 cups coleslaw mix
  • 46 tortillas
  • 1/4 cup low-sodium soy sauce
  • 2 Tbsp rice apple vinegar
  • 2 Tbsp brown sugar or honey
  • 1/2 Tbsp minced garlic
  • 1/2 Tbsp minced ginger
  • 1 tsp sriracha sauce
  • 1/4 cup chopped cilantro
  • 1/4 cup roasted, salted peanuts
  • 1/2 cup grated carrot (optional)
  • 12 Tbsp water (optional)

Instructions

  1. For the peanut sauce, whisk together peanut butter, soy sauce, brown sugar or honey, rice apple vinegar, minced garlic, minced ginger, and sriracha. Add water gradually if a thinner consistency is desired.
  2. In a large bowl, combine chopped chicken, coleslaw mix, cilantro, and roasted peanuts. Drizzle the peanut sauce over the mixture and toss to coat.
  3. Warm tortillas in the microwave for about 30 seconds to soften them.
  4. Divide the filling among the tortillas and roll tightly to enclose the filling.
