  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika (smoked or sweet)
  • 1 tablespoon fresh rosemary or thyme, chopped (optional)

Instructions

  1. Preheat your oven to 425°F (220°C). Prepare a baking sheet by lining it with parchment paper.
  2. Cut the potatoes into even, bite-sized chunks and parboil them in salted water for about 7-8 minutes until slightly softened.
  3. Drain the potatoes well and let them sit in a colander for a few minutes. In a large bowl, toss the potatoes with olive oil, kosher salt, black pepper, garlic powder, paprika, and optional herbs.
