2 pounds Yukon Gold or russet potatoes, cut into 1-inch chunks
3 tablespoons olive oil
1 teaspoon kosher salt
1/2 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon paprika (smoked or sweet)
1 tablespoon fresh rosemary or thyme, chopped (optional)
Instructions
Preheat your oven to 425°F (220°C). Prepare a baking sheet by lining it with parchment paper.
Cut the potatoes into even, bite-sized chunks and parboil them in salted water for about 7-8 minutes until slightly softened.
