  • 1/2 cup butter, melted

  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 tablespoons brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon all-purpose flour
  • 1 cup pecans, chopped
  • 1/4 cup light corn syrup
  • 1/3 cup light brown sugar
  • 1/3 cup heavy cream
  • 1/4 teaspoon cinnamon
  • 4 tablespoons unsalted butter

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare an 8×8-inch baking pan by greasing it and lining it with parchment paper.
  2. In a bowl, mix graham cracker crumbs with sugar, melted butter, and salt until combined. Press firmly into the bottom of the prepared pan.
  3. Beat softened cream cheese with granulated sugar, brown sugar, eggs, vanilla extract, and flour until smooth. Pour over the crust.
  4. In a saucepan, melt butter then add chopped pecans, corn syrup, brown sugar, heavy cream, cinnamon, vanilla extract, and salt. Stir until warm but not boiling; pour over the cheesecake filling.
  5. Bake for about 35 minutes or until set with a slightly jiggly center. Cool completely before refrigerating for at least two hours or overnight. Cut into squares to serve.
