  • 1/2 cup salted butter, room temperature
  • 1 cup heavy whipping cream, room temperature
  • 5 tbsp all-purpose flour, sifted
  • 1/4 cup pecan chips
  • 2 cups graham cracker crumbs
  • 3 tbsp brown sugar
  • 4 oz semi-sweet chocolate chips
  • 6 tbsp heavy whipping cream
  • 24 oz cream cheese, room temperature
  • 1 cup light brown sugar
  • 3 tbsp all-purpose flour
  • 1 cup sour cream
  • 1 1/2 tbsp vanilla extract
  • 3 large eggs
  • 3 tbsp heavy whipping cream

Instructions

  1. For the caramel sauce, melt sugar over medium-high heat until golden amber. Stir in butter and cream until smooth. Reserve some for topping.
  2. For the crust, mix graham cracker crumbs with melted butter and brown sugar, then press into a springform pan and bake at 325°F for 10 minutes.
  3. Layer pecans and reserved caramel over the cooled crust.
  4. Melt chocolate chips with heavy cream and pour over the pecan layer.
  5. Beat cream cheese with brown sugar and flour until smooth; add sour cream and eggs one at a time. Pour over the chocolate layer.
  6. Bake in a water bath at 300°F for about 1 hour and 35 minutes until set but jiggly in the center.
  7. Chill overnight before serving with additional caramel drizzle.
