  • 1 onion (diced)
  • 3 garlic cloves (minced)
  • 2 stalks celery (or 1/2 small celery root, diced)
  • 2 medium carrots (diced)
  • 2 pounds potatoes (chopped)
  • 4 cups vegetable broth (or water)
  • 1/3 cup dairy-free cream
  • Fresh parsley (to garnish)

Instructions

  1. In a large pot, heat oil over medium heat. Add diced onion and sauté for about 3 minutes until soft.
  2. Stir in minced garlic, celery, carrots, potatoes, and spices; sauté for another minute to release flavors.
  3. Pour in vegetable broth and add bay leaves if using. Bring to a boil, then reduce heat and simmer for about 20 minutes until vegetables are tender.
  4. Remove bay leaves and blend half of the soup until smooth using an immersion blender.
  5. Return blended soup to pot, stir in dairy-free cream or coconut milk, season to taste, and simmer for a few more minutes.
  6. Serve warm, garnished with fresh parsley and optional vegan sausage slices.
