  • 2 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper
  • 1 zucchini, diced
  • 1 cup cherry tomatoes, halved
  • 1 cup baby spinach, chopped
  • 1 cup mushrooms, sliced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 cup tomato sauce
  • 1/2 cup Greek yogurt
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Fresh parsley or basil for garnish

Instructions

  1. Cook the quinoa by bringing vegetable broth to a boil in a medium saucepan. Add rinsed quinoa, reduce heat, cover, and simmer for about 12–15 minutes until liquid is absorbed.
  2. In a large skillet over medium heat, sauté onion and garlic in olive oil until fragrant (about 2 minutes). Add bell pepper, zucchini, mushrooms, and cherry tomatoes; cook for an additional 5–7 minutes until softened. Stir in baby spinach along with herbs.
  3. In a small bowl, mix tomato sauce with Greek yogurt and red pepper flakes (if desired) to create a creamy sauce.
  4. Preheat the oven to 190°C (375°F). In a large bowl, combine cooked quinoa with sautéed vegetables and sauce until evenly coated.
  5. Transfer mixture to a greased baking dish (9×13 inches). Top with mozzarella and Parmesan cheese. Cover with foil and bake for about 20 minutes; then remove foil and bake for another 10 minutes until cheese is bubbly and golden.
  6. Let rest for five minutes before serving. Garnish with fresh herbs.
