  • 1 large yellow onion (chopped)
  • 2 cloves garlic (minced)
  • 2 tablespoons chili powder
  • 1 pound lean ground turkey
  • 2 cans cannellini beans (rinsed and drained)
  • 14.5 ounces low sodium fire roasted diced tomatoes
  • 3 cups low sodium chicken broth
  • Juice of 1 lime
  • Fresh cilantro

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté chopped onion for 5–6 minutes until translucent, then add minced garlic and spices.
  2. Add ground turkey and break it up, cooking until no longer pink (about 5–6 minutes).
  3. Mash one cup of rinsed beans in a bowl and then combine all ingredients in the pot.
  4. Bring to a boil, reduce heat to simmer uncovered for 20–30 minutes until thickened. Stir in lime juice and cilantro before serving.
