  • 1 cup white sugar
  • 3/4 cup brown sugar
  • 1 1/2 teaspoon vanilla extract
  • 1 teaspoon peppermint extract
  • 2 large eggs
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup crushed candy canes
  • 1 cup white chocolate chips (plus more for dotting on the tops)

Instructions

  1. Preheat your oven to 350F degrees and line cookie sheets with parchment paper.
  2. In a large bowl, cream together softened butter, shortening, white sugar, and brown sugar until fluffy (about 2 minutes).
  3. Add vanilla and peppermint extracts; mix in eggs one at a time until fully incorporated.
  4. Gradually mix in flour, baking soda, and salt until combined.
  5. Fold in crushed candy canes and white chocolate chips.
  6. Scoop about 1 – 1.5 tablespoons of dough per cookie onto prepared sheets, spacing them two inches apart.
  7. Bake for 8-10 minutes until just set; add extra white chocolate chips on top if desired.
  8. Allow to cool on the baking sheet for 10 minutes before transferring to a wire rack.
