Ingredients

  • 1 cup dry farro
  • 1 head of broccoli, cut into florets
  • 1 small red onion, chopped
  • 23 cups kale, destemmed and chopped
  • 1 (15 oz) can of chickpeas, rinsed
  • 1/4 cup pomegranate seeds
  • Garlic citrus dressing (olive oil, lemon juice, garlic, Dijon mustard)

Instructions

  1. Cook farro in salted boiling water for 15-17 minutes until al dente. Drain and cool.
  2. Roast broccoli and onion at 400°F with avocado oil and spices for about 15 minutes.
  3. Prepare the dressing by whisking together all ingredients in a bowl or jar.
  4. In a large bowl, massage kale with some dressing until wilted. Add roasted vegetables, chickpeas, pomegranate seeds, and remaining dressing. Toss to combine.
