Yaki Udon with Shrimp is a quick and flavorful stir-fry that features thick, chewy udon noodles tossed with succulent shrimp and vibrant vegetables.

Ingredients

  • 200g udon noodles
  • 100g shrimp (810 pieces)
  • 1 minced garlic clove
  • 1 sliced yellow onion
  • 120g white mushrooms (8, sliced)
  • 1 matchstick-cut carrot
  • 2 tablespoons neutral oil
  • various sauces: soy sauce, oyster sauce, dark soy sauce, rice vinegar, brown sugar

Instructions

  1. Boil udon noodles as per package instructions; drain and rinse with cold water.
  2. In a non-stick pan, heat 1 tablespoon of oil and sauté garlic until fragrant. Add mushrooms, onions, and carrots; stir-fry for about 3 minutes and set aside.
  3. In the same pan, add another 2 tablespoons of oil and cook the shrimp until pink. Season with soy sauce.
  4. Toss in the boiled noodles and stir-fry on high heat until slightly crispy.
  5. Add oyster sauce, dark soy sauce, rice vinegar, brown sugar, and the sautéed vegetables; mix well.
  6. Serve immediately with chopped spring onions on top.
