  • 4 medium zucchinis
  • 1 lb lean ground turkey
  • 2 cloves garlic
  • 1 cup low-carb marinara sauce
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 15 oz ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 large eggs

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Slice zucchini lengthwise into 1/8-inch strips; salt lightly and let sit for 10 minutes before patting dry.
  3. In a skillet, heat olive oil over medium heat; cook ground turkey until browned. Add garlic and seasonings, then stir in marinara sauce and simmer for 5 minutes.
  4. In a bowl, mix ricotta, mozzarella (1 cup), Parmesan, eggs, and remaining herbs until combined.
  5. In a baking dish, layer meat sauce, zucchini slices, cheese mixture three times; finish with meat sauce and remaining mozzarella on top.
  6. Cover with foil and bake for 30 minutes; uncover and bake for an additional 15 minutes until cheese is bubbly.
