  • 2 cups all-purpose flour
  • 2/3 cup cake flour
  • 1 1/2 tsp cream of tartar
  • 1 1/2 tsp cinnamon
  • 1 tsp salt
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp nutmeg
  • 12 Tbsp unsalted butter, cold, cut into cubes
  • 1 1/4 cup dark brown sugar, packed
  • 1/3 cup apple butter
  • 1 large egg yolk
  • 2 tsp vanilla extract
  • 2 Tbsp sugar for coating
  • 1 tsp cinnamon for coating
  • 2 Tbsp unsalted butter, melted for glaze
  • 1 cup powdered sugar for glaze
  • 2 Tbsp apple butter for glaze
  • 1/2 tsp vanilla extract for glaze
  • pinch of salt for glaze
  • splash of milk to thin out, if needed

Instructions

  1. Preheat oven to 350°F and line baking sheets with parchment paper.
  2. In a bowl, whisk together flours, cream of tartar, cinnamon, salt, baking soda, and nutmeg.
  3. Cream cold butter and sugar until fluffy; mix in apple butter.
  4. Add egg yolk and vanilla until blended.
  5. Gradually incorporate dry ingredients until just combined.
  6. Chill dough for at least 30 minutes.
  7. Roll chilled dough in cinnamon-sugar mix and place on baking sheets.
  8. Bake for 10–11 minutes; cool before glazing.
