  • 1 teaspoon fine sea salt
  • 1/3 cup whole milk (room temperature)
  • 1/3 cup heavy cream (room temperature)
  • 1 large egg (room temperature)
  • 1 teaspoon vanilla extract
  • Tangzhong (from recipe above)
  • 6 tablespoons unsalted butter (room temperature)
  • 1/2 cup unsalted butter (room temperature)
  • 2/3 cup brown sugar (packed)
  • 2 teaspoons ground cinnamon
  • 4 tablespoons unsalted butter (room temperature)
  • 2 ounces cream cheese (room temperature)
  • 1 cup powdered sugar
  • 2 1/2 tablespoons heavy cream
  • 2 tablespoons apple butter

Instructions

  1. Prepare the filling by mixing diced apples, apple butter, sugar, water, lemon juice, cinnamon, vanilla extract, and salt in a bowl until well-coated.
  2. Make the dough by heating water with cornstarch until thickened. Combine warm water with bread flour, sugar, yeast, and salt in a bowl. Stir in milk, cream, egg, vanilla extract, tangzhong mixture, and softened butter until smooth.
  3. Knead the dough on a floured surface until elastic. Place in a greased bowl covered with plastic wrap; let rise for about 90 minutes or until doubled.
  4. Roll out the dough into a rectangle; spread with butter and sprinkle with brown sugar and cinnamon mixture before adding the apple filling. Roll tightly and cut into equal pieces.
  5. Place on a lined baking sheet to rise again for about an hour. Preheat oven to 350°F (175°C) and bake for approximately 30 minutes or golden.
  6. Prepare the frosting by beating together room-temperature cream cheese with softened butter until creamy; gradually add powdered sugar followed by heavy cream and apple butter until smooth.
  7. Once rolls are slightly cooled, drizzle generously with frosting before serving.
