  • 1 tablespoon lemon juice
  • 3/4 teaspoon cinnamon
  • 1/4 cup sugar
  • 2 teaspoons cornstarch
  • 8 egg roll wrappers
  • Vegetable oil (for frying)

Instructions

  1. In a saucepan over medium-high heat, combine diced apples, lemon juice, cinnamon, and sugar. Cook until softened.
  2. Whisk cornstarch with water; add to the apple mixture and stir until thickened. Remove from heat and stir in vanilla extract. Cool completely.
  3. Fill each egg roll wrapper with about 1/4 cup of the apple mixture and roll tightly, sealing edges with water.
  4. Heat oil in a heavy pot to 360°F. Fry egg rolls until golden brown on all sides. Drain on paper towels.
  5. Serve warm with whipped cream or caramel sauce.
