Apple Snickerdoodles are the ultimate cozy fall treat, combining the classic snickerdoodle cookie with the delightful flavors of caramelized apples and brown butter.

  • 250 grams gala apples (peeled and finely diced)
  • 184 grams unsalted butter (browned)
  • 100 grams dark brown sugar
  • 100 grams granulated sugar
  • 2 teaspoons vanilla extract
  • 1 egg
  • 1 egg yolk
  • 250 grams all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cream of tartar
  • 1 tablespoon ground cinnamon

Instructions

  1. Prepare the apples by tossing diced gala apples with dark brown sugar, cinnamon, salt, and lemon juice. Cook in a pan over low heat until caramelized, then chill.
  2. Brown the butter in a pot until golden and fragrant; cool briefly.
  3. Whisk together flour, baking soda, cream of tartar, cinnamon, and salt in a bowl.
  4. In another bowl, mix cooled brown butter with sugars and vanilla; add eggs and blend.
  5. Fold in caramelized apples, then combine wet and dry mixtures to form dough.
  6. Chill dough for 2-3 hours before preheating the oven to 350°F (175°C).
  7. Shape dough into balls, coat in cinnamon-sugar mixture, and bake for about 12-14 minutes.
