  • 220 g caster sugar
  • 4 medium eggs
  • 50 g ground almonds
  • 170 g self-raising flour
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 8 halved apricots
  • Caster sugar for sprinkling

  1. Preheat your oven to 180°C (350°F) and grease your baking pan.
  2. Cream together the butter and caster sugar until light and fluffy.
