  • 2 tbsp cornflour/cornstarch
  • 1 tbsp lemon juice
  • ¼ tsp salt
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 6 oz cold unsalted butter
  • ½ cup white sugar
  • ¼ tsp salt
  • 2 tbsp whole milk
  • ½ tsp spice powder (cinnamon, pumpkin spice, or gingerbread spices)

Instructions

  1. Preheat oven to 375°F (190°C) and line an 8×8 cake pan with parchment paper.
  2. In a food processor, mix flour, sugar, salt, and cold butter until crumbly. Divide into two bowls—one for the base and one for the topping.
  3. Add milk to the base mixture; press into the pan and bake for 10 minutes until lightly golden.
  4. Toss chopped apricots with sugar and cornstarch; spread over baked base.
  5. Sprinkle chilled crumble topping over apricots and bake for 35-40 minutes until golden.
