  • 1/4 cup (60 ml) water
  • 1/4 cup (60 ml) freshly squeezed lemon juice
  • 1.8 kg (4 lb) granulated sugar

  1. Prepare the apricots by washing them thoroughly, cutting them in half, removing the pits, and chopping them into small pieces.
  2. In a large pot, combine the chopped apricots with water and lemon juice. Heat over medium until simmering.
  3. Gradually add the sugar while stirring continuously until fully dissolved.
  4. Increase heat to high and bring the mixture to a rolling boil. Stir frequently for 40–55 minutes until achieving your desired consistency.
  5. Remove from heat and let cool slightly before pouring into sterilized jars. Seal with lids while hot.
