  • 1 1/2 cups unsalted butter, cold and cubed
  • 1 large egg, beaten
  • 2 cups dried apricots, chopped
  • 1/2 cup granulated sugar (for filling)
  • Fresh lemon juice

Instructions

  1. In a saucepan, combine chopped apricots, water, and sugar; simmer until tender. Stir in lemon juice and cool.
  2. Preheat oven to 375°F (190°C); prepare a baking pan.
  3. Mix flour, sugar, baking powder, and salt; cut in cold butter until crumbly. Combine with beaten egg and vanilla.
  4. Press most of the dough into the pan; add apricot filling and crumble remaining dough on top.
  5. Bake for 30–35 minutes until golden brown; cool completely before cutting.
