  • 1 bundle scallions, thinly sliced (whites and greens separated)
  • 10 cups water
  • 8 oz dried ramen noodles
  • 1 cup carrot, cut into thin matchsticks
  • kosher salt
  • black or white pepper
  • black rice vinegar
  • soy sauce
  • toasted sesame oil

Instructions

  1. In a large pot over medium heat, combine water and kosher salt. Add chicken thighs; bring to a boil.
  2. Reduce heat; simmer for about 15 minutes until chicken is cooked through.
  3. Remove chicken; let cool slightly before shredding.
  4. Stir in garlic, ginger, scallion whites, pepper, vinegar, soy sauce, and sesame oil into the broth.
  5. Cook ramen noodles separately according to package instructions; drain and add to the soup along with shredded chicken.
  6. Stir in carrot matchsticks just before serving.
