  • 2 English cucumbers (or 67 medium pickling cucumbers)
  • 1 medium carrot
  • 1/4 cup red onion
  • 1 tsp fresh ginger
  • 1 clove garlic
  • 2 tbsp coconut aminos
  • 1 tsp sesame oil
  • 1/2 tsp apple cider vinegar
  • 1/2 tsp fish sauce (optional)
  • 1 tbsp sesame seeds (for topping)

Instructions

  1. Wash and thinly slice the cucumbers. Grate the carrot and thinly slice the red onion.
  2. In a small bowl, whisk together coconut aminos, sesame oil, apple cider vinegar, minced garlic, and optional fish sauce until well combined.
