  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 1 medium carrot, diced
  • 23 celery stalks, diced
  • 23 garlic cloves, finely chopped
  • 2 bay leaves
  • 2 chicken breasts (about 12 oz / 350 g total)
  • 6 cups chicken stock
  • 3/4 cup orzo
  • Juice of 1 lemon
  • 2 egg yolks
  • Fresh dill for garnish
  • Salt and pepper to taste

Instructions

  1. In a large stock pot or Dutch oven, heat olive oil over medium heat. Sauté onion, carrot, and celery until softened (about 8–10 minutes).
  2. Add garlic and cook for an additional minute. Stir in bay leaves, chicken breasts, and chicken stock.
  3. Bring the mixture to a boil, then reduce heat to medium-low. Cover and simmer for about 15 minutes.
  4. Remove chicken and bay leaves; add orzo to the pot. Cook for another 10 minutes.
  5. Shred the cooked chicken and return it to the pot.
  6. Whisk together egg yolks and lemon juice in a bowl. Temper by adding a ladle of hot soup to the mixture before stirring it back into the pot.
  7. Cook gently for another 5 minutes while stirring, then stir in fresh dill before serving.
