  • 1 red bell pepper, diced
  • 1/2 small red onion, diced
  • 3 cloves garlic, minced
  • 8 ounces feta cheese
  • 4 large eggs
  • 4 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1 teaspoon sea salt
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon red pepper flakes
  • 1 cup baby spinach

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In oven-safe dishes, layer tomatoes, bell pepper, red onion, garlic, and feta cheese. Drizzle olive oil over the top.
  3. Mix oregano, salt, thyme, black pepper, and red pepper flakes in a bowl; sprinkle over the ingredients in the dishes.
  4. Bake for about 25 minutes until cooked through.
  5. Stir in spinach and create wells for eggs; crack an egg into each well.
  6. Return to oven and bake for another 10 minutes until eggs are set but slightly runny.
