  • 1/3 cup basil pesto
  • 6 ounces smoked gouda cheese (shredded)
  • 24 ounces marinara sauce
  • 20 large fresh basil leaves
  • 2 large fresh mozzarella balls (16 oz total)

Instructions

  1. Preheat your oven to 425°F (220°C) and prepare a 9×13 inch baking dish with cooking spray.
  2. In a large saucepot over medium heat, bring vegetable broth to a boil. Whisk in polenta and salt; lower heat and simmer for about 15 minutes until thickened.
  3. Stir in basil pesto and smoked gouda until well combined; pour into the prepared baking dish.
  4. Bake uncovered for about 25-35 minutes until firm.
