  • 4 medium beets
  • 2 large oranges
  • ¼ cup crumbled feta cheese (optional)
  • ¼ cup chopped walnuts
  • ¼ cup red onion, thinly sliced
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon honey
  • Salt and black pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and trim the beets, then wrap each in aluminum foil and place on a baking sheet. Roast for 45-60 minutes until tender.
  3. Peel the cooled beets using a paper towel or your fingers.
  4. Slice off the top and bottom of each orange, remove peel and pith, then cut into rounds or segments.
  5. In a small bowl, whisk together olive oil, balsamic vinegar, honey, salt, and pepper.
  6. On a serving platter, layer roasted beet slices and orange segments; top with red onion, feta cheese, and walnuts.
  7. Drizzle the dressing over the salad just before serving.
