  • 1/2 cup orange juice
  • 1/4 cup lime juice
  • 3 tablespoons olive oil
  • 34 garlic cloves (minced)
  • 1 tablespoon achiote powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon dried oregano
  • 2 teaspoons sea salt
  • 3 pounds chicken (thighs and/or breasts)

Instructions

  1. In a mixing bowl, whisk together orange juice, lime juice, olive oil, garlic, achiote powder, cumin, coriander, oregano, salt until well blended.
  2. Place chicken in a resealable bag and pour marinade over it. Seal tightly and massage to coat evenly. Refrigerate for at least 30 minutes (overnight for best flavor).
  3. Preheat grill to medium-high heat or oven to 400°F.
  4. Remove chicken from marinade and discard excess. Grill for about 6–8 minutes per side or bake for 35–40 minutes until internal temperature reaches 165°F.
