  • ¼ cup lemon zest + ½ cup lemon juice
  • 1 large egg + 5 large egg yolks
  • ⅓ cup honey
  • 10 ounces fresh blueberries
  • 2 tablespoons cornstarch
  • 1 tablespoon reserved lemon juice from the curd preparation

Instructions

  1. Prepare the tart crust by mixing flour, sugar, and salt. Incorporate chilled butter until crumbly, then add egg yolk, cream, and vanilla. Press into a tart pan and chill for 30 minutes.
  2. Preheat oven to 350°F (175°C) and bake the crust for 20 minutes until golden. Let cool.
  3. For the lemon curd, combine zest, juice, eggs, honey, and salt in a saucepan over medium heat. Stir until thickened (about 10 minutes), then mix in butter and cream.
