  • 500 g bread flour
  • 355 g room temperature water
  • 100 g fresh blueberries
  • Zest of one lemon
  • 10 g salt

Instructions

  1. Feed your starter 6-10 hours before use.
  2. In a large bowl, mix 335g water, active starter, and bread flour until well-combined.
  3. Cover and rest the dough for 20-30 minutes.
  4. Add salt and remaining water (20g), knead gently for 1-2 minutes.
  5. Bulk ferment at room temperature for 30 minutes; add blueberries and lemon zest, performing stretch and folds every 30-40 minutes for up to 1.5 hours.
  6. Shape the dough and place in a proofing basket; rise for 2 hours at room temp or refrigerate up to 72 hours.
  7. Preheat the oven with a Dutch oven inside.
  8. Score the dough, bake covered at 500°F (260°C) for 20 minutes, then lower to 400°F (200°C) and bake uncovered for an additional 30-35 minutes.
  9. Cool completely before slicing.
