  • 2 (12-ounce) bags broccoli slaw
  • 3 (3.5-ounce) packages ramen noodles (discard flavor packets)
  • 3/4 cup roasted cashews
  • 1/2 cup dried cranberries
  • 1/3 cup chopped scallions
  • 1/2 cup olive oil
  • 3 tablespoons rice vinegar
  • 1 tablespoon brown sugar
  • 1/2 tablespoon soy sauce
  • 1/2 teaspoon toasted sesame oil

Instructions

  1. In a jar, combine olive oil, rice vinegar, brown sugar, soy sauce, and sesame oil. Seal tightly and shake until well mixed.
  2. Break ramen noodles into small pieces by hand.
  3. In a large salad bowl, mix together broccoli slaw, broken ramen noodles, cashews, cranberries, and scallions.
  4. Shake the dressing again before pouring over the salad mixture. Toss to coat evenly.
  5. Let sit for 15-20 minutes before serving to allow flavors to meld.
