  • 4 Vine Ripened Tomatoes (diced)
  • 1/2 small Red Onion (diced)
  • 2 tbsp Fresh Basil (chopped)
  • 1 Clove Garlic (minced)
  • 500 g Spaghetti Pasta
  • 5 tbsp Extra-Virgin Olive Oil
  • Salt and Pepper to taste
  • Optional: Parmesan Cheese or other cheese varieties

Instructions

  1. Cook pasta in a large pot of salted boiling water until al dente; drain.
  2. In a medium bowl, combine diced tomatoes, red onion, chopped basil, minced garlic, salt, pepper, and 3 tablespoons olive oil. Allow to marinate for 10-15 minutes.
  3. Toss cooked pasta with the bruschetta mixture and drizzle with remaining olive oil. Top with cheese if desired.
