  • 1 ¼ lbs cooked and shredded chicken breast
  • ½ cup buffalo sauce
  • ¼ cup ranch dressing (optional)
  • ½ cup diced red bell pepper
  • 2 ribs celery, thinly sliced
  • 2 green onions, thinly sliced

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut the spaghetti squash in half lengthwise and scoop out the seeds.
  3. Place cut-side down on a baking sheet lined with parchment paper and roast for about 45 minutes until tender.
  4. In a mixing bowl, combine shredded chicken, buffalo sauce, ranch dressing (if using), celery, green onions, and bell pepper.
  5. Once the squash is cool enough to handle, scrape some flesh from each half into the chicken mixture.
  6. Spoon the mixture back into the squash halves and return to the oven for an additional 10-15 minutes until heated through.
