  • 1 cup heavy cream
  • 1 cup shredded coconut (toasted)
  • 1 cup Cadbury Mini Eggs

Instructions

  1. Preheat oven to 350°F.
  2. Combine crushed graham crackers, sugar, and melted butter; press into cheesecake cups.
  3. Mix softened cream cheese and sugar until smooth; add eggs and vanilla.
  4. Pour filling over crust in cups; bake for 13-15 minutes.
  5. Cool in the oven for 5 minutes; then on a wire rack completely.
  6. Prepare ganache by pouring hot heavy cream over chopped chocolate until melted and smooth.
  7. Top cooled cheesecakes with ganache, toasted coconut, and Cadbury Mini Eggs.
  8. Chill before serving.
