  • ¼ cup kosher salt
  • ¾ cup 100% maple syrup
  • ¼ cup honey

Instructions

  1. Slice the salmon into 1-inch cubes (approx. 35 pieces).
  2. In a large bowl, mix brown sugar, kosher salt, maple syrup, honey, and 2 cups of water to create the marinade.
  3. Submerge salmon cubes in the marinade; cover with plastic wrap and refrigerate for at least 3 hours or overnight.
  4. Preheat smoker to 180°F; line grates with aluminum foil.
  5. Arrange marinated salmon on grates, spaced 1 inch apart.
  6. Smoke for about 1 hour; flip and brush with glaze every 45 minutes for an additional 4-5 hours until fully cooked.
