  • 1/4 cup red onion (finely chopped)
  • 2 cups spinach
  • 3/4 cup crumbled feta cheese
  • 1 cup shredded mozzarella cheese
  • 3 flour tortillas (8-inch)

Instructions

  5. Cook for 3–4 minutes until golden brown; flip carefully and cook for another 3–4 minutes until both sides are golden.
  6. Remove from the skillet and let rest for a minute before slicing into wedges.
