  • 1 can chickpeas, drained and rinsed
  • 1 tablespoon olive oil
  • 1 teaspoon lemon juice
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon paprika
  • 1/2 cup diced cucumber
  • 1/2 cup diced tomato
  • 1/4 cup chopped red onion
  • 1/4 cup chopped fresh parsley
  • 4 whole wheat tortillas
  • 1/4 cup hummus
  • 1/4 cup crumbled feta cheese

Instructions

  1. Rinse and drain the chickpeas. Pat dry with paper towels.
  2. In a bowl, mash the chickpeas with a fork or potato masher until slightly chunky.
  3. Add olive oil, lemon juice, cumin, paprika, salt, and pepper to the mashed chickpeas; mix well.
  4. Dice cucumber, tomato, and onion; combine in a separate bowl with parsley.
  5. Spread hummus on each tortilla.
  6. Layer the chickpea mixture followed by the vegetable mixture and feta on each tortilla.
  7. Roll up tightly and cut in half for serving.
