  • 3 1/2 cups all-purpose flour
  • 1/4 cup all-purpose flour (for tangzhong)
  • 3/4 cup water
  • 1/3 cup granulated sugar
  • 2 teaspoons instant yeast
  • 1/3 cup heavy cream
  • 1/3 cup whole milk
  • 1 egg
  • 6 tablespoons unsalted butter (softened for filling)
  • 4 tablespoons unsalted butter (for glaze)
  • 1 ounce cream cheese (for glaze)
  • semi-sweet chocolate chips
  • mini chocolate chips

Instructions

  1. Activate yeast by combining warm water and instant yeast in a bowl; let sit until foamy.
  2. Prepare tangzhong by whisking together 1/4 cup flour and 3/4 cup water in a saucepan over medium heat until thickened; set aside.
  3. In a stand mixer, combine activated yeast mixture, tangzhong, cream, milk, egg, vanilla paste, softened butter, granulated sugar, remaining flour, and salt; mix until combined.
  4. Knead the dough on medium speed for about 8-10 minutes until smooth; let rise in an oiled bowl covered for about 60-90 minutes or until doubled in size.
  5. After rising, roll out dough into a rectangle and spread filling made of softened butter and mini chocolate chips over it; roll tightly and cut into pieces.
  6. Place cut rolls in a greased dish to rise again for about 30 minutes before baking at 350°F for approximately 25-30 minutes or until golden brown.
  7. Prepare glaze while rolls bake by mixing cream cheese and butter until smooth; gradually add powdered sugar followed by heavy cream and vanilla extract.
  8. Drizzle glaze over warm rolls once baked.
