  • 1/2 cup brewed coffee, cooled
  • 1/4 cup milk
  • 1 tsp vanilla extract
  • 1/2 cup heavy cream (for filling)
  • 2 tbsp powdered sugar
  • 1 tsp instant coffee granules
  • 1/2 cup heavy cream (for ganache)
  • 4 oz dark chocolate, chopped

Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, beat granulated sugar, brown sugar, and vegetable oil until smooth. Add eggs, cooled coffee, milk, and vanilla; mix until combined.
  4. Gradually add dry ingredients to wet mixture; stir gently until just combined.
  5. Fill cupcake liners about 2/3 full with batter. Bake for 18–20 minutes or until a toothpick comes out clean. Cool on wire rack.
  6. Whip heavy cream with powdered sugar and instant coffee until stiff peaks form; fill cupcakes with the mixture using a piping bag.
  7. For ganache: Heat heavy cream until simmering; pour over chopped dark chocolate, let sit for one minute then stir until smooth. Drizzle over filled cupcakes.
