Ingredients

Scale
  • 1 cup creamy peanut butter
  • 1/2 cup powdered sugar (sifted)
  • 1/2 tsp ground cinnamon
  • 2 1/4 cups all-purpose flour
  • 1/2 cup Dutch process cocoa powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 cup unsalted butter (melted)
  • 1 1/4 cups brown sugar (packed light or dark)
  • 1/4 cup white granulated sugar
  • 1 tsp pure vanilla extract
  • 2 large eggs (room temperature)
  • 1 1/2 cups semi-sweet chocolate chips

Instructions

  1. Prepare the Peanut Butter Filling: In a bowl, mix peanut butter, powdered sugar, and ground cinnamon until smooth. Chill for 30 minutes.
  2. Preheat Oven: Set your oven to 350°F (175°C) and line baking sheets with parchment paper.
  3. Make the Cookie Dough: In one bowl, combine flour, cocoa powder, baking soda, and salt. In another bowl, mix melted butter, sugars, vanilla extract, and eggs until well combined. Gradually add the dry ingredients.
  4. Form the Cookies: Scoop tablespoon-sized dough, flatten it, place a teaspoon of chilled filling in the center, and form a ball around it.
  5. Bake: Place cookie balls on sheets two inches apart and bake for 12-15 minutes until edges set but centers are soft. Let cool slightly before transferring to wire racks.
