  • 2 cloves garlic, minced
  • ⅓ cup fresh basil leaves, torn
  • ¼ teaspoon black pepper
  • 1 tablespoon red wine vinegar (or balsamic vinegar)
  • 2 tablespoons olive oil
  • 1 baguette, sliced
  • Extra virgin olive oil for brushing
  • Optional: Parmesan cheese for garnish

Instructions

  1. In a mixing bowl, combine diced tomatoes and salt; let sit for 20-30 minutes to enhance flavor. Drain excess juice.
  2. Add minced garlic, torn basil leaves, black pepper, red wine vinegar, and olive oil to the tomatoes; mix gently and let marinate at room temperature for another 20-30 minutes.
  3. Preheat oven to 400°F (200°C). Brush both sides of baguette slices with olive oil and place on a baking sheet lined with parchment paper. Toast for about 5 minutes on one side; flip and toast for an additional 2-3 minutes until golden brown.
  4. For optional balsamic glaze: In a small saucepan over medium heat, simmer balsamic vinegar and brown sugar until thickened (about 10 minutes). Let cool slightly.
