  • 1 pound beef stew meat or chuck roast (lamb or mutton for authenticity)
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1/4 cup olive oil or butter
  • 6 cloves garlic, minced
  • 4 cups beef broth
  • 2 cups water
  • 1 cup Guinness stout beer
  • 1 cup red wine
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoons butter
  • 1 large onion, diced
  • 2 cups carrots, diced
  • 2 pounds potatoes, diced

Instructions

  1. Preheat a heavy-bottom pot over medium-high heat.
  2. Season the meat with salt and pepper, then brown it in the hot pot with olive oil or butter for about 3 minutes on each side.
  3. Once browned, stir in minced garlic, thyme, tomato paste, beef broth, red wine, and Guinness. Bring to a simmer.
  4. In a separate pot, sauté diced carrots and onions in butter until fragrant (about 10 minutes).
  5. Add sautéed vegetables to the simmering stew along with uncooked potatoes; cook on low heat for another 30 minutes until potatoes are fork-tender.
  6. Serve hot with fresh herbs as garnish.
