  • 5 garlic cloves
  • ½ onion (sliced)
  • ½ red onion (sliced)
  • 2 cups vegetable broth
  • 30 oz coconut milk
  • 3 carrots (peeled and cut)
  • ½ lbs small potato medley
  • 4 baby bok choy (quartered)

Instructions

  1. Heat canola oil in a large pot over medium heat. Sauté sliced onions, garlic, ginger, lemongrass, scallions, and chilies until fragrant.
  2. Add small potatoes and carrots; stir for about 5 minutes.
  3. Mix in ground spices (black peppercorns, coriander seeds, cumin), salt, and sugar.
  4. Pour in vegetable broth; bring to a boil then simmer until potatoes are tender (about 15 minutes).
  5. Blend the soup until creamy.
  6. Return soup to pot; stir in coconut milk over low heat.
  7. Add bok choy and cook for another 5 minutes until tender.
