  • 6 oz bacon, chopped
  • 1 large yellow onion, diced
  • 1 celery rib, diced
  • 2 lbs carrots, peeled and sliced
  • 2 garlic cloves, minced
  • 4 cups chicken stock
  • 1/2 cup milk
  • 1/2 cup heavy cream
  • Sea salt and black pepper to taste

Instructions

  1. In a large pot or Dutch oven over medium heat, cook the chopped bacon until browned. Remove and set aside.
  2. In the same pot, sauté the onion and celery for 6–8 minutes until softened. Add the carrots and cook for another minute with minced garlic, salt, and pepper.
  3. Pour in the chicken stock and bring to a simmer. Cover partially and cook for 20–25 minutes until carrots are tender.
  4. Blend the soup to a smooth consistency using an immersion blender or traditional blender in batches.
  5. Stir in milk and heavy cream; adjust seasoning as desired before serving.
