  • 1 medium onion (diced)
  • 1 jalapeno pepper (diced)
  • 1 red bell pepper (diced)
  • 3/4 cup dried red lentils
  • 15 ounces black beans (drained & rinsed)
  • 15 ounces red beans (drained & rinsed)
  • 3 1/2 cups vegetable broth
  • 15 ounces tomato sauce
  • 3/4 cup salsa
  • 1/2 cup light cream cheese
  • Crushed tortilla chips for garnish

Instructions

  1. Prepare the vegetables: Dice the onion and red bell pepper, rinse the lentils and beans.
  2. In a slow cooker, add diced onion, jalapeno, red bell pepper, vegetable broth, tomato sauce, salsa, lentils, black beans, red beans, smoked paprika, garlic powder, cumin, cayenne pepper (if using), salt, and pepper.
  3. Cover and cook on low for about 6 hours or high for about 3 hours until ingredients are tender.
  4. Stir in the cream cheese until melted and fully combined.
  5. Serve hot garnished with crushed tortilla chips.
