  • 1 cup buttermilk
  • 1 tablespoon hot sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup all-purpose flour
  • 1/2 cup cornstarch
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper (optional)
  • Vegetable oil, for frying
  • 1/2 cup mayonnaise
  • 2 tablespoons grated Parmesan cheese
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • 1/2 teaspoon Worcestershire sauce
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 4 brioche buns, split
  • 4 cups chopped romaine lettuce
  • 1/2 cup shaved Parmesan cheese
  • Optional: Tomato slices

Instructions

  1. Marinate chicken in buttermilk, hot sauce, salt, and pepper for at least 30 minutes.
  2. Prepare dredging mixture of flour, cornstarch, garlic powder, onion powder, paprika, and cayenne.
  3. Dredge marinated chicken in the flour mixture until fully coated.
  4. Heat vegetable oil in a skillet to 350°F (175°C).
  5. Fry chicken for 6–8 minutes per side until golden brown and cooked through (internal temp at least 165°F).
  6. Drain on a wire rack lined with paper towels.
  7. Whisk together mayonnaise, grated Parmesan cheese, lemon juice, Dijon mustard, minced garlic, Worcestershire sauce, and black pepper for the dressing.
  8. Toast brioche buns if desired; assemble by spreading dressing on both halves and layering lettuce and fried chicken.
