  • 2 pounds new potatoes
  • 1 pound large carrots
  • 4 large eggs
  • 3 tablespoons apple cider vinegar
  • Kosher salt (to taste)
  • 1 cup mayonnaise

Instructions

  1. Bring a large pot of salted water to a boil.
  2. Peel and dice the potatoes and carrots into even sizes.
  3. Cook the potatoes and carrots in boiling water until tender, then drain and cool on a sheet tray with vinegar and salt.
  4. Hard boil the eggs by placing them in cold water, bringing to a boil, then letting sit covered for 12 minutes before chopping.
  5. In a mixing bowl, combine cooled vegetables and chopped eggs with mayonnaise; adjust seasoning if needed.
  6. Chill the salad for at least one hour before serving.
